Mushrooms A La Grecque Recipe
I have been trying to recreate the perfect mushrooms a la grecque recipe for a long time. Mushrooms a la grecque is a mushroom recipe that brings back memories of holidays in France as a child. My parents used to rent houses or gîtes in French villages. It was a great way to learn the French language and more about village life. To get our food we would visit the local shops and markets. Our mum used to let us order baguettes and we felt a sense of achievement when we did so successfully. The baguettes were carried back to the gîte triumphantly.
We learnt what the different shop names meant by looking in the windows. The names had a magical ring about them, la charcuterie, la fromagerie, we used to practice the names. Our favourite was la confiseur or the sweet shop. Our pocket money was spent on flavoured chewing gum. It came in all flavours, lemon, raspberry, strawberry and many more. Being used to mint flavour we found this fascinating.
The delicatessen was a shop we visited regularly. My mum used to buy selections of their salad dishes to eat with our lunches. Salad was our usual lunch on holidays as it was easy to prepare. There is nothing worse than spending all your holiday cooking. Mum let us pick a salad dish each and one day I choose mushrooms a la grecque. For a mushroom lover this dish was a revelation. Mushroooms a la grecque is a cold mushroom dish that is served in a spicy tomato sauce and gorgeous served with a salad or mopped up with crusty bread.
Mushrooms a la Grecque
Mushrooms a la Grecque is a really simple recipe to make. Mushrooms are the star of this recipe, either whole button mushrooms or sliced mushrooms. The sauce really sets the mushrooms off with its spicy flavour. The mix of water, wine vinegar, garlic and tomato purée combined with fresh herbs comes together to make a rich tangy sauce. The mushrooms are simmered gently in the sauce for around ten minutes to pick up the flavour. The dish is then left to cool and a tablespoon of lemon juice added which adds some bite.
For my Mushrooms a la Grecque I used Cirio tomato purée. Mushrooms a la Grecque is all about the tomato flavour and Cirio tomato purée is double concentrated so it packs and extra punch. It really helps add the authentic tomato taste to the dish and bring out the flavour of the sauce. I am a big fan of Cirio tomato products anyway, they have so much more flavour than a lot of products on the market. Tomatoes have so much more flavour when they are home grown and Cirio comes close to matching this taste.

Mushrooms a la Grecque
Ingredients
- 8 oz 225g mushrooms
- 4 tbsp water
- 4 tbsp wine vinegar
- 3 tbsp olive oil
- 2 tbsp Cirio tomato purée
- 1 tbsp fresh herbs thyme, basil or rosemary
- 2 cloves garlic
- 1 tbsp lemon juice
Instructions
- Peel and crush the garlic cloves
- Chop the mushrooms into slices. If you are using button mushrooms these can be used whole.
- Place the mushrooms into a pan and add the water, tomato puree, olive oil, wine vinegar, garlic and herbs.
- Bring to the boil and simmer gently for ten minutes.
- Leave to cool then stir in the lemon juice
