An easy to make delicious chicken recipe that won't break the bank
Remove the skin from the chicken thigh, take out bone and chop in half
Put the chicken in a bowl with the Caribbean seasoning and mix well
Peel the sweet potatoes and chop into small cubes
Heat the oil in a pan and cook the chicken for 3 - 4 minutes until brown.
Add the rest of the ingredients
Bring to the boil and simmer for 15-20 minutes until the sweet potatoes are tender
Serve with crusty bread and salad
