Caribbean chicken with sweet potatoes

An easy to make delicious chicken recipe that won't break the bank

  • 8 chicken thighs
  • 4 tsp Carribbean seasoning mix
  • 200 g Frozen mixed peppers
  • 500 g sweet potatoes
  • 400 g tin chopped tomatoes
  • 200 ml water
  • 1 tbsp oil


  • Remove the skin from the chicken thigh, take out bone and chop in half
  • Put the chicken in a bowl with the Caribbean seasoning and mix well
  • Peel the sweet potatoes and chop into small cubes
  • Heat the oil in a pan and cook the chicken for 3 - 4 minutes until brown.
  • Add the rest of the ingredients
  • Bring to the boil and simmer for 15-20 minutes until the sweet potatoes are tender


Serve with crusty bread and salad
