A delicious Mexican toasted sandwich that can be made with a variety of fillings

  • 30 g sliced ham
  • 5 strips red pepper
  • 50 g cheddar cheese
  • 1 spring onion
  • 1 tsp oil


  • Brush the outside of the tortilla with oil
  • Chop the ham and add to one half of the tortilla
  • Chop the spring onion and add on top of the ham
  • Add the slices of red pepper
  • Cover with grated cheese
  • Heat a griddle pan
  • Add the tortilla to the griddle pan and cook until the cheese melts
  • Fold the tortilla in half sandwiching the filling using a spatula
  • Move to a chopping board and cut into segments
