A delicious Mexican toasted sandwich that can be made with a variety of fillings

  • 30 g sliced ham
  • 5 strips red pepper
  • 50 g cheddar cheese
  • 1 spring onion
  • 1 tsp oil
  1. Brush the outside of the tortilla with oil

  2. Chop the ham and add to one half of the tortilla

  3. Chop the spring onion and add on top of the ham

  4. Add the slices of red pepper

  5. Cover with grated cheese

  6. Heat a griddle pan

  7. Add the tortilla to the griddle pan and cook until the cheese melts

  8. Fold the tortilla in half sandwiching the filling using a spatula

  9. Move to a chopping board and cut into segments
