Italian Chicken
A tasty chicken dish cooked with bacon and mushrooms in tomato sauce. Perfect for a midweek meal

- 3 chicken breasts
- 125 g 4 oz pancetta or bacon bits
- 120 g 5oz mushrooms
- 500 g jar tomato pasta sauce
- 150 ml water
Cut the chicken into cubes. Brown in a pan with a little oil and set aside
Chop the bacon and mushrooms into pieces
Add to the pan and fry for three minutes
Return the chicken to the pan
Add the water and pasta sauce
Reduce the heat, cover and simmer for thirty to forty minutes until the chicken is cooked.
