Green lentil salad

Ingredients

  • 200 g green lentils
  • 900 ml water
  • 2 to matoes
  • ½ red pepper
  • 6 cm cucumber
  • for the dressing
  • 1 tsp mustard
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • black pepper
  • 1 tsp mixed herbs

Instructions

  • Put the lentils in a pan and add the water
  • Bring to the boil and cook for about 25 minutes until the lentils are soft
  • Leave to cool
  • Cut the tomato, cucumber and red pepper into small pieces and mix with the lentils.
  • Mix the ingredients for the vinaigrette dressing together and pour over the salad.
