Smoky Sausage Casserole

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 1 stick celery
  • 1 red pepper
  • 8 sausages
  • 3 tsp paprika
  • ½ tsp cumin
  • ½ tsp chilli flakes
  • 2 400 g cans chopped tomatoes
  • 400 g canellini beans

Instructions

  • Peel and chop the onions and garlic.
  • Deseed the pepper and chop into small pieces
  • Chop the celery into chunks
  • Heat some oil in a pan and add the onions, garlic, pepper and celery.
  • Cook for three minutes then add the sausages and cook until brown
  • Add the tins of tomato and the paprika, cumin and chilli
  • Cover the pan and cook for forty minutes.
  • Before serving drain the tin of beans and add to the pan.
  • Stir though and heat until they are warm.
