Macadamia nut blondies
Ingredients
  • 125 g butter
  • 400 g light soft brown sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 125 g plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 80 g macadamia nuts
  • 50 g dessicated coconut
  • 100 g white chocolate chopped into chunks
Instructions
  1. Preheat the oven to 180C Gas Mark 4
  2. Line a small baking tin with baking parchment
  3. Cream together the butter and sugar until fluffy
  4. Mix in the eggs one at a time and the vanilla essence
  5. Stir in the flour, baking powder and salt
  6. Add the nuts, chocolate and coconut to the mixture
  7. Pour into the baking tin
  8. Bake in the oven for half an hour or until firm but still squishy
