Macadamia nut blondies

Ingredients

  • 125 g butter
  • 400 g light soft brown sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 125 g plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 80 g macadamia nuts
  • 50 g dessicated coconut
  • 100 g white chocolate chopped into chunks

Instructions

  • Preheat the oven to 180C Gas Mark 4
  • Line a small baking tin with baking parchment
  • Cream together the butter and sugar until fluffy
  • Mix in the eggs one at a time and the vanilla essence
  • Stir in the flour, baking powder and salt
  • Add the nuts, chocolate and coconut to the mixture
  • Pour into the baking tin
  • Bake in the oven for half an hour or until firm but still squishy
