Turkey piccata with lime sauce

Ingredients

  • 4 turkey breast steaks
  • 1 tsp rosemary
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp black pepper
  • 2 tbsp plain flour
  • 50 g butter
  • 1 onion
  • 3 tbsp lime juice
  • 150 ml white wine
  • ¼ tsp cider vinegar
  • ¼ tsp tobasco sauce
  • 1 tsp soy sauce
  • 2 tbsp capers

Instructions

  • Chop the herbs into small pieces and mix in a bowl with the flour and black pepper.
  • Cut the turkey into strips and coat each strip with the flour mixture
  • Peel and chop the onion into small pieces
  • Heat the butter in a non stick pan
  • Add the onion and sauté until soft
  • Add the turkey and brown each side for three to four minutes until cooked.
  • Remove from pan and set aside.
  • Add the lime juice, wine, cider vinegar, soy sauce, tobasco and capers to the pan
  • Cook for a couple of minutes until the sauce thickens
  • Add the turkey back to the pan and warm though
