Courgette and pepper bruschetta

Ingredients

  • 1 tbsp Lyle's black treacle
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 4 thick slices of sourdough or rustic bread
  • 2 large courgettes
  • 1 red pepper
  • Parmesan cheese and black pepper to season

Instructions

  • Peel and crush the garlic clove.
  • Mix together the black treacle, garlic, lemon juice and olive oil.
  • Brush the slices of bread with the mixture.
  • Pre-heat a chargrill pan or grill
  • Toast the bread on both sides
  • Slice the courgette diagonally and brush the pieces with the glaze.
  • Chargrill on both sides for about one minute.
  • Chop the pepper into slices and chargrill these
  • Arrange the pepper and courgette on the toasted bread
  • Season with parmesan cheese and black pepper
  • Drizzle with any remaining glaze
