Cod with chorizo

  • 4 cod fillets
  • 100 g chorizo
  • 100 g button mushrooms
  • 1 400 g tin chopped tomatoes
  • 1 tsp chilli
  • 1 tbsp Olive oil
  1. Preheat the oven to 200c, Gas Mark 6
  2. Chop the chorizo into small pieces and chop the mushrooms in half
  3. Place the cod fillets in an ovenproof dish
  4. Add the olive oil to a pan
  5. Add the mushrooms and chorizo and cook gently for a few minutes
  6. Pour in the tomatoes and add the chilli powder and bring to the boil
  7. Pour the sauce over the cod fillets
  8. Bake in the oven for 30 minutes.
