Tutti Frutti ice cream

  • 2 egg whites
  • 120 g vanilla caster sugar
  • 300 ml double cream
  • ½ tsp almond essence
  • 60 g glacé cherries
  • 60 g dried mango
  • 60 mixed berries
  • 30 g pistachios
  1. Chop the dried fruit into smaller pieces
  2. In a bowl whisk the cream until it is thick
  3. Whisk the egg whites in a separate bowl until they are stiff. Add the sugar and whisk.
  4. Fold the egg white mixture into the cream
  5. Add the fruit to the mixture and stir though
  6. Churn in a ice cream maker until ready or freeze in a plastic tub for four to five hours until firm
