Tutti Frutti ice cream

  • 2 egg whites
  • 120 g vanilla caster sugar
  • 300 ml double cream
  • ½ tsp almond essence
  • 60 g glacé cherries
  • 60 g dried mango
  • 60 mixed berries
  • 30 g pistachios


  • Chop the dried fruit into smaller pieces
  • In a bowl whisk the cream until it is thick
  • Whisk the egg whites in a separate bowl until they are stiff. Add the sugar and whisk.
  • Fold the egg white mixture into the cream
  • Add the fruit to the mixture and stir though
  • Churn in a ice cream maker until ready or freeze in a plastic tub for four to five hours until firm
