Mexican Chilli Beef

Ingredients

  • 1 lb braising steak
  • 1 large onion
  • 6 mushrooms
  • 2 cloves garlic
  • 1-2 red chilli peppers de-seeded and chopped
  • 2 tbsp ground paprika
  • 2 tbsp cumin
  • grated rind and juice of 2 limes
  • 400 g can tomatoes
  • 2 tbsp tomato purée
  • ½ pint beef stock
  • salt and pepper
  • 1 tsp sugar
  • 400 g can kidney beans

Instructions

  • Cook the beef in some oil until it is browned.
  • Add the onions and mushrooms and cook until soft.
  • Add the garlic, chillies, and spices and continue cooking for one minute.
  • Add the tomatoes, tomato purée, beef stock and lime juice and rind.
  • Add the sugar and season with salt and pepper.
  • Bring to the boil and simmer for an hour, or until the beef is tender.
  • Stir in the kidney beans and simmer for ten more minutes.
