Place the pork chops in a pan and lightly brown on both sides.
Remove from heat and set aside on a plate while you make the sauce.
Chop the plums and remove the stones
Chop the garlic and gently cook until soft
Add the soy sauce, red wine vinegar, brown sugar and ginger to the pan and bring to the boil.
When the sugar has dissolved add the plums.
Cook gently until the plums soften and the sauce thickens. You can mash the plums with a potato masher to make a less lumpy sauce.
Put the chops back into the pan and cook until done.
