Pork chops in plum sauce

Ingredients

  • 4 pork chops
  • 1 clove garlic
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp red wine vinegar
  • 1 tsp fresh ginger
  • 6 plums

Instructions

  • Place the pork chops in a pan and lightly brown on both sides.
  • Remove from heat and set aside on a plate while you make the sauce.
  • Chop the plums and remove the stones
  • Chop the garlic and gently cook until soft
  • Add the soy sauce, red wine vinegar, brown sugar and ginger to the pan and bring to the boil.
  • When the sugar has dissolved add the plums.
  • Cook gently until the plums soften and the sauce thickens. You can mash the plums with a potato masher to make a less lumpy sauce.
  • Put the chops back into the pan and cook until done.
