Ana's Cheese Empanadas

Ingredients

  • 400 g plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 115 g butter
  • 50 ml orange juice
  • 80 ml sparkling water
  • 250 g cheddar cheese
  • 1 medium onion
  • 1½-2 tablespoons caster sugar
  • 1 egg

Instructions

  • Mix the flour, baking powder and salt in a bowl.
  • Add the water, orange juice and butter and knead into a dough.
  • Place the dough in the fridge, wrapped in cling film, to rest for thirty minutes.
  • Grate the cheese into a bowl.
  • Finely chop or grate the onion and add it to the cheese along with the sugar. Mix well.
  • Preheat the oven to 200C, 400F Gas Mark 6 and line a baking sheet with baking parchment.
  • Roll out the dough until it is a couple of millimetres thick.
  • Use a round cutter to cut out circles in the dough, add some cheese mixture to the centre and fold the circle in half and press together.
  • Brush each of the finished empanadas with beaten egg
  • Cook in the oven for 10-15 minutes until golden
