Potato Cakes

Ingredients

  • 350 g cold mashed potatoes
  • 4 spring onions finely sliced
  • salt and freshly ground black pepper
  • 1 large egg beaten
  • 100 g plain flour plus some for dusting

Instructions

  • In a large bowl mix the mash with the spring onions. Season with salt and black pepper
  • Add the egg and flour and mix together until the mixture starts to form a ball.
  • Place the dough of a floured work top and divide into 8 pieces. Roll each into a ball then flatten to form a cake no thicker than 15mm.
  • Heat some oil in a frying pan. Add the cakes to the hot oil and fry for six to eight minutes until they are crispy and golden.
