Vanilla Cupcakes
You may not have realised but this week is National Baking Week. Given that as an excuse I decided I was going to make some cupcakes with my son. I have not made cakes for awhile due to a minor disaster with leaking cake tins the last time I tried, but I though cupcakes would be safe as they have paper cases! They are also fairly easy to make so my son could get involved whisking, and that all important task licking the bowl afterwards.
This is the recipe I used.
Ingredients
- 150 g (5 oz) butter
- 150 g (5 oz) caster sugar
- 175 g (6 oz) self raising flour
- 3 eggs
- 1 teaspoon vanilla essence.
Method
Preheat the oven to 180C, 350F, Gas Mark 4. Add all the ingredients into a mixing bowl and whisk up until the mixture is light and creamy. Put the mixture into the cupcake cases. It should make twelve but I found it made a couple more. Bake for 20 minutes until they are firm to touch.
As you can see they turned out very nicely and tasted nice as well. We did decorate them but that is another story which you can read here. I used a simple butter cream icing which you can make as follows:
Butter Cream Icing
Ingredients
- 150g (5 oz) butter
- 250 g (8 0z) icing sugar
- 1 teaspoon vanilla essence
- 2 teaspoons hot water
Put butter and icing sugar in bowl and whisk till smooth and creamy. Add vanilla and hot water and beat till smooth. Make sure the butter is soft before you start and add the icing sugar a little at a time, don’t do what I did and put hard butter in the bowl with the icing sugar and then whisk. It’s a great way to make yourself look like Casper the friendly ghost but not the best way to make icing!
