Valentine’s Day Recipe: Hot Chocolate Soufflé

Are you eating in or going out this Valentine’s Day? I love to try and cook a special meal at home and it seems I am not alone. According to a survey by Russell Hobbs, who make kitchen gadgets, 22% of us like to try and create an impressive three course meal at home and 17% of us prepare a basic meal. Sadly though 28% of us do not celebrate Valentine’s day at all. I think it nice to send a card to your loved one at the very least, it shows you care.

What are you cooking up this Valentine’s Day? If you are looking for a decadent dessert how about a Hot Chocolate Soufflé? Russell Hobbs sent me this recipe to share and it made me smile that they used their Desire Hand mixer to whip it up.

Maybe using the mixer will whip up more than the soufflé ?This is the recipe if you want to try it.

Hot Chocolate Souffle

Servings 2

  • 75 g butter
  • 450 ml milk
  • 50 g plain flour
  • 4 eggs separated
  • tbsp cocoa powder
  • 50 g caster sugar


  • Preheat the oven to 190°C
  • Melt the butter in a pan, stir in the flour and cocoa, and blend over a low heat. Add the milk and mix well using the Desire Hand Whisk until thickened slightly. Remove from the heat and set aside to cool, then add the egg yolks and beat in.
  • Put the egg whites in the bowl, mix on speed 6 for a few seconds, then add the sugar and continue to whisk until soft peaks form. Fold in the sauce.
  • Pour the mixture into a greased 1.2 litre dish. Stand the dish in a roasting tin filled half full with boiling water, put into the oven, and bake for 40- 45 minutes, until well risen.
