Spooky Victoria Sandwich Cake

With Halloween coming I wanted to try my hand at creating something a little bit spooky. In my mind I wanted to create a cake with a graveyard on top, a seriously haunted cake. To be honest I am not that good at cake decorating, I would love to be able to produce a zombie master piece. Can you imagine, a zombie made from cake?

I decided that chocolate would work well for decoration, I could use it to make gravestones, a path and a fence. I also managed to find some green cake sprinkles that I thought would work well for grass. For the cake I made a simple Victoria Sandwich. I thought that a butter icing would be perfect for decorating. I even managed to find some chocolate eyeballs and pumpkins for the finishing touches. This is the result:

There is a path going though the graveyard with gravestones on either side. The graveyard is surrounded by a fence and all I need is a few dead hands rising from the earth. I think it is quite good for a first attempt. I have to admit my son did most of the decoration which is why it looks a little wonky but it worked quite well. It also tasted delicious.

Victoria Sandwich Cake Recipe

Ingredients

Method

  1. Preheat the oven to 190C, 375F, Gas Mark 5
  2. Grease two 8″ (20.5cm) sandwich tins and line with baking parchement
  3. Cream the sugar and the butter together until fluffy
  4. Add the eggs to the mixture and mix.
  5. Gradually fold in the flour until it is mixed well.
  6. Place the mixture in the two tins and bake on the same shelf of the oven for 20 minutes until risen and firm.
  7. Leave to cool before icing

Butter Icing

Ingredients

Method

  1. Beat the butter until creamy
  2. Gradually add the icing sugar whilst mixing.
  3. Add the vanilla essence and the milk or water gradually until the mixture is soft.

Cover the top of one of the sponge halves with jam. Cover the bottom of the other sponge half with butter icing and stick the two halves together. Use the rest of the butter icing to cover the top of the sponge and decorate as desired.
