Newcastles Favourite Family Dish

August 20, 2013

Tesco have just launched their  Love Every Mouthful campaign to encourage people to celebrate cooking and get creative with everyday food.  As part of this I was sent some ingredients so I could make my regions top family meal. These are the ingredients I was sent.

Chicken IngredientsCan you guess what the dish is from looking at the ingredients?

Tesco have recently carried out some research about peoples eating habits. In a survey of 2000 UK parents found out the following information. 66% of people from Newcastle admit to being passionate about food and nearly three out of five (57%) Newcastle mums and dads are passionate about cooking. 62% spend more than 30 minutes cooking their evening meal on a weekday and only 5% use the microwave for the main family meal. I think those are stats we can be pleased with.  The study also found Geordie s are not very adventurous in the kitchen, 47% will stick to making what they know like Spaghetti Bolognese.

So what are Newcastle’s top five family meals? They are:

Did you guess? The meal I was asked to make was roast chicken. It was not just any roast chicken, it was Glazed Roast Chicken.

Roast ChickenI have to say it was delicious and the roast potatoes cooked in lemon were gorgeous. The glaze added a lovely taste to the chicken. This is the recipe if you want to try to recreate it at home.

Glazed Roast Chicken

  1. Preheat the oven to 200C, Fan 180C, Gas Mark 6.
  2. In a pan combine the honey, soy sauce, ginger, garlic and rice wine. Boil for five minutes until thick and sticky. I found that it didn’t appear to thicken but if you left it to sit for a couple of minutes it did.
  3. Put the chicken in a roasting tin and coat with half the glaze. Roast for 50 minutes then coat with the rest of the glaze. Return to the oven for 30 minutes until cooked though the the juice runs clear. Roast Chicken
  4. Chop the charlotte potatoes in half and put in a roasting tin. Toss with lemon slices, oil and seasoning. Put in the oven for the last 30 minutes of the cooking time.Roast Potatoes
  5. Boil the broccoli for 3 minutes and serve with the chicken and potatoes.
