Autumn is here and with it the mornings are getting colder. The perfect start to a cold day is a warm breakfast. A breakfast that fills you up and stops you reaching for a chocolate bar mid morning. Eggs baked in avocado is the ideal breakfast. Full of heart healthy fatty acids and a high protein count this is a low sugar and fibre full breakfast to get you going. It is a great addition to a paleo diet.

Just scoop out a little of the avocado, break an egg into it, season and pop into the oven. You can then get on with other things for fifteen minutes. Then remove from the oven and enjoy.

The type that helps to lower cholesterol. Eggs are a budget friendly high quality protein and are perfect paired with avocado for this breakfast.
Avocados only grow in tropical or sub-tropical climates and are not native to the UK. They are commonly grown in Florida and South America. Here they are often known as Alligator Pears due to the shape and leathery appearance of the skin. The fruits only ripen after harvesting.
A delicious and filling healthy breakfast
Preheat the oven to 220C Gas Mark 7
Cut the avocado in half and scoop out a little flesh
Place on a baking tray
Crack the egg and pour gently into the hole in the avocado
Bake for 15 minutes until the egg is set and the yolk runny
Season with salt and pepper
