Date Flapjack Recipe
I have decided to be daring this month and join in with the Tea Time Treats which is co-hosted by Lavender and Lovage and What Kate Baked. This month it is hosted by Lavender and Lovage and the theme is Flapjacks, Oats and Tray Bakes. A perfect theme for Autumn. I decided to try a recipe of my mum’s that I have not tried before. In her notes it is named Date Sludge but it is more of a Date Flapjack Recipe. It is really simple to make and the sweet taste of the dates really brings out the oaty taste.
They are really simple and easy to make as well as being very delicious. This is the recipe:
Date Flapjack Recipe
Ingredients
For the date sludge
- 1 220g pkt cooking dates, broken up
- 4oz (115g) soft brown sugar
- 6 fl oz (180ml)water
For the flapjack
- 5 oz (14og) self raising flour
- 5 oz (140g) quaker oats
- 6 oz (170g) margarine
- 4 oz (115g) soft brown sugar
Method
- Mix together the ingredients for the date sludge in a pan and boil slowly until the sugar is dissolved.
- Preheat the oven to 350F, Gas Mark 4, 180C
- Place the flapjack ingredients in a bowl and rub together until they are well mixed.
- Grease a baking tin, or use baking parchment to cover the bottom.
- Place half the flapjack mixture on the bottom of the tin and press down.
- Cover with the date mixture.
- Place the rest of the flapjack mixture on the top.
- Place in the oven for 30 – 40 minutes then leave to cool. Cut into slices whilst warm.
A perfect tea time treat.

Don’t you just love Mum’s comments in their recipes. I have one that says 1 pkt shortbread biscuits (cheap!) just in case I went out and bought the expensive ones. These do look delicious too.
