A Champagne Thank You

Everyone has someone in life who deserves a thank you. For me it is my elderly neighbour. She was a welcoming face when we first moved in, always stopping for a chat and to see how we were. She has watched my son growing up and always has a present for him on his birthday and at Christmas. She takes in parcels while I am at work and keeps an eye on the house while I am away. It is great to have her as a neighbour.

Champagne thank you

There has been much drama over the years, she and her husband rushed by son to hospital when he was learning to walk and managed to split his head open. She was in a car crash and as a result her husband later died. She slipped in the snow and broke her wrist and my son was on hand to call me for help. There have also been weddings and new babies over the years which are shared with me in photos.

I was delighted when Waitrose gave me the chance to give her a champagne thank you. They sent me a bottle of champagne and a voucher to treat her with. I decided I was going to make a plate of Florentines take round to her with the champagne. These biscuit, bursting with fruit always seem to me to be a special treat.

My son and I made the Florentines together, he chopped cherries and weighed the fruit. I melted butter and sugar and he mixed them up. We watched them bake together. When they were cool we took them round with the champagne to surprise our neighbour.

FlorentinesWhen she opened the door she got a great surprise. My son delighted in telling her that he had made the biscuits and we enjoyed some together whilst chatting. It was lovely to thank her for all the things she has done over the years and nice to spend some time talking.

Waitrose are also offering you a bottle of champagne to say thank you, all you need to do is to shop online with them before the 31st January and spend more than £50. They will send you a complimentary bottle of champagne with your order, which you can use to treat yourself or surprise a special someone with. It is a lovely idea.

Florentine Recipe

Ingredients
  • 150 g butter
  • 175 g caster sugar
  • 4 tbsp double cream
  • 75 g mixed peel
  • 50 glace cherries
  • 3 oz flaked almonds
  • 40 g dried cranberries
  • 50 g plain flour
Instructions
  1. Add the butter and sugar to a pan and heat gently until the butter melts. Bring to the boil then remove from the heat.
  2. Add the rest of the ingredients to the pan and stir well until combined.
  3. Using a teaspoon drop twelve spoonfuls on each baking sheet, leaving a gap between each drop so they can spread
  4. Bake for seven minutes, then remove from the oven and use a cookie cutter to round the florentines off,
  5. Place back in the oven and cook for five minutes until golden.
  6. Leave to cool for a few minutes then transfer to baking parchment using a palette knife to finish cooling. Repeat until all the mixture is baked.
