Did you get snow last week? From the way the news and weather were talking we were about to experience the end of the world. Snow was moving in and tidal surges were about to cause massive flooding. Flood barriers were put up around the river and everyone was ready for the worst. The next day we did wake up to some snow. Not much, about an inch. It was there until the sun rose and then the melting started. A couple of hours later it was gone. At least I can say I have seen some snow this winter.
Despite the lack of snow it was bitter. A howling wind swirled round the house creating drafts wherever it could find a hole. It was the sort of weather where you want to stay inside and eat comfort food. Going out is not a pleasure. Your fingers and ears freeze, turning blue until they are hard to move. What could be nicer than a warming casserole on a day like this? It will fill you up and bring back the warmth into your body as you eat. Easy paprika pork is perfect. The mix of tomatoes and peppers with a touch of paprika will make you think of summer. Every warming mouthful will bring back the sunshine into your winter.
Easy Paprika Pork
The thing I like about recipes that use a casserole dish is that they can be left in the oven to cook. This is a great time saver, allowing you to get other things done while the oven works its magic. If you are going out for the day you could use the slow cooker instead. On your return a gorgeous smell will hit you when you open the door. You will be instantly hungry and all you need to do is to serve the meal. The hard work has already been done.
Paprika pork is really easy to make, a few minutes effort and you have your reward when you eat it later. All you need to do is to brown some chopped pork in a pan and then set it aside. Use the same pan to soften some onions and red peppers. Return the pork to the pan and add some spices, a tin of tomatoes and white wine vinegar. Once it is simmering you can place in a casserole dish and cook it in the oven. For more time saving you could cook the pork in the casserole on the hob and put it straight in the oven. The dish can be served with many things. Baked potatoes are perfect for a cold winter day. Rice would make a more traditional side.

Paprika Pork
Ingredients
- 500 g pork
- 1 onions
- 1 red pepper
- 1 garlic clove
- 1 tbsp paprika
- ½ tsp caraway seeds
- 400 g tin tomatoes
- 75 g tomato purée
- 1 tbsp white wine vinegar
- 50 ml water
- ½ tsp dried oregano
Instructions
- Preheat the oven to 150C, Gas Mark 2
- Chop the pork into pieces.
- Add some oil to a pan and brown the pork. Set aside.
- Peel and chop the onion and garlic.
- Chop the pepper into pieces and remove the seeds
- In the pan gently fry the onion until soft.
- Add the pepper and garlic and fry for another minute
- Return the pork to the pan with the paprika and caraway seeds
- Add the tomatoes, tomato purée, vinegar and water. Bring to a simmer.
- Place in a casserole dish in the oven for an hour and a half to two hours. Add a little water after an hour if needed
