Cranberry and White Chocolate Chip Cookies
Recently I was sent a challenge by Wilko, and as I love challenges I had to get involved. They sent me a recipe for gooey gourmet cookies which I had to customize by adding my own fillings to make a unique flavour. They sent me some ideas for fillings to get me started but I had a look though my cupboards and decided I would try a mixture of dried cranberries and white chocolate chips. I thought this sounded like a lovely idea for a filling and in keeping with the season.
These biscuits are really easy to make and would make a lovely gift placed in a box with some tissue paper and a ribbon. To add a unique stamp to my cookies Wilko also send me a Wilko Vintage Cookie Press. The idea is that you press these into the biscuits and it puts a message onto the cookie. There are three templates, Eat Me, Home Made and Baked With Love. I was looking forward to trying them and writing the recipe into the recipe notebook that came along with them.I have to say the Cranberry and White Chocolate Chip cookies were delicious and I will be making them again. If you want to give them a try this is the recipe:
Cranberry and White Chocolate Chip Cookies
Ingredients
- 225 g butter
- 225 g caster sugar
- 170 g condensed milk
- 350 g self-raising flour
- 75 g dried cranberries
- 75 g white chocolate chips
Instructions
- Preheat the oven to 180C, Gas Mark 4
- Cream the butter, sugar and condensed milk together in a large bowl until pale and creamy
- Mix in the flour, cranberries and white chocolate chips
- Knead into a dough.
- Take small handfuls of the dough and flatten. Place on baking trays lined with baking parchment, leaving room for the cookies to expand.
- Bake for 15-20 minutes, until golden brown on the edges
You can vary the fillings to suit, some of the suggestions I was sent were:
- 150g chocolate, any flavour
- 50g chocolate, 50g raisins and 25g crushed hazelnuts
- 50g crushed pecans and 100g chocolate.
I think I might try the pecan and chocolate ones next.

Om nom, those look so yummy – I’ve never tried making cookies without golden syrup, does it thicken up easily or take a really long time to mix?

Ooh I made cranberry and white choc cookies recently too but mine were chunky and didn’t use condensed milk. These look all lovely and thin & gooey like Millie’s Cookies. I want them!
